Tomatillo stew- Husband rates it A++

You will need:
1.5 lbs tomatillos
1 poblano pepper
1 can yellow hominy
1 can black beans
1 lb cooked pork, diced into 1/2 inch cubes
2 cans chicken broth
3 cups water
Garlic powder
Dehydrated minced onion
Cumin
Red pepper flakes
Pinch-o-salt

This is the tomatillo. Its not a green tomato. Actually, for those interested,  its a member of the gooseberry family, if my memory serves me. But that's what google is for, so back to the recipe. Look for tomatillos with taut papery skins on the outside. The berry should be firm. Peel the papery skin off, like this:


Now, rinse off these cute little things because they are quite sticky and cut into quarters. Place on baking sheet with the poblano pepper that you have seeded and diced. Drizzle with olive oil. Place under your broiler for 5-7 minutes.Let mixture cool completely on the counter. While you are waiting, you could cook your pork! Or Google "tomatillo". Hey, what a fancy idea.

Anyways, once the mixture is cool blend it up(and I mean COOL...or else you will have hot tomatillo explosion in your face)! Then it will look like this:

Combine everything in a big pot. Spice to your liking,  but please go easy on that cumin... its pretty strong :) cook everything for about 2 hours on low heat. Just walk away...don't worry, it will be there when you get back. Maybe..

Serve with a little sour cream and a cerveza. Yummmm.
