This time of year is filled with early harvest fruits and veggies, and what better way to forget the dreary winter than with a fresh, fruity salad?
Both strawberries and spinach are grown this time of year, and if you cant grow them yourself, they are at least a little cheaper at the store :)
You will need:
1/4 cup chopped pecans or walnuts
1 bag of spinach
8-10 strawberries, ripe
1/4 cup vegetable oil
1/2 cup balsamic vinegar
1/2 tsp salt
1/3 cup sugar or 1/4 cup honey
1 tsp dried onion
To make the dressing:
Combine oil, vinegar, onion, salt and sugar in blender. Blend until combined. Stick it in the fridge for about a half hour before serving. Prior to pouring on salad, shake thoroughly.
For salad:
Slice strawberries and toss with spinach. Before serving, sprinkle with nuts and drizzle with dressing.
Can I just saw how freaking good this salad is? Its one of my absolute favorites. I can pretty much eat it all the time. YUM. I served it last night with some dressed up leftovers.
