Putting up herbs for the winter

J and I are taking a long cross country trip soon, and I wanted to make sure I got some of the herbs put up for winter before they go to seed. Drying herbs is the easiest way to do that, however sometimes in the winter its nice to have some fresh ones, too.

First: line a container with plastic wrap. Clean and dry the herb on a paper towel and place inside the lined container. Here I have dill.

 Cover the herb with olive oil and then stick it in the freezer.
 ...aaaand here's some Thyme....
 This is what it looks like after you pull it out of the freezer. Wrap it tightly in the plastic wrap and store herbs inside a freezer bag. When you want to use them, you can either cut off a piece of the bar, or you can let it defrost and strain the oil off. Make sure to save the oil though, its infused with awesome herbs!
