Cold day, hot soup



Cabbage. We have a love/hate relationship. I like it when you are paired with corned beef and horseradish, or pickled into sauerkraut and on a reuben. When you are raw, I despise you.

What a hideous, tough vegetable. I rarely buy it, unless I'm making something specific. While at Kroger the other day I saw the ugly round beast sitting in a bin. The last one available. 20 cents a pound.

And you know I cant turn down a deal like that. So here we are. What to do with this nasty thing in my fridge?? I remembered something delicious my mom made with cabbage once: spicy cabbage soup. I can do that!

Spicy Cabbage Soup

1/2 head of cabbage diced into 1 inch pieces
1/2 pound spicy sausage
3 large carrots, peeled and chopped
1 green bell pepper, diced into 1/2 inch pieces
3 medium red potatoes, diced into one inch cubes
2 tbs minced dried onion (I was out of fresh!)
2 tsp ground chile arbol (you can use red pepper flake, too.)
1 can chicken broth
1 tsp garlic powder (again, out of fresh)



Saute sausage, carrots, bell pepper and potatoes in large soup pot until sausage is cooked through. Or heck, omit the sausage if your a vegetarian or whatever. Substitute vegetable broth if you want. Go crazy! Then, after you are done being crazy,  add the spices and stir.









Add broth. Stir some more! Add your cabbage. Cover and cook until cabbage is wilted and edible. I dont have a picture of it in a bowl yet because its still cooking~

Mmm....cabbage and potatoes. Must be some Irish and German people in this house :)
