Burrrrrito!

Everyone needs a kitchen helper.
What a productive morning!I managed to go on a freezer cooking frenzy, and now our freezer is nice and full of convenience foods that are wholesome and homemade :)
I made:
14 breakfast burritos
12 Bean and turkey burritos for lunches
12 Pancake sausage muffins
2 chicken pot pies
2 pans of baked oatmeal with cranberries  
Ice cream base to put in our ice cream maker later tonight :)


This stuff+heat=good
 Being Cinco de Mayo and all, I figured I'd do a post on how to make kick ass breakfast burritos.
You will need:
1lb ground sausage
6 eggs
1 onion, diced
1 bell pepper, diced
1 potato, diced small
1 cup salsa
1 cup  grated cheese
14 tortillas
Dice your potatoes small, they'll cook faster.
 Combine potato, bell pepper and onion and saute in a large pan- the largest you own! Saute over med-hi heat for 5-10 minutes. Add sausage, breaking it apart into small pieces with your stirring device. I use a spoon with a hole in it. I don't know what that hole it for, but whatever.
Seriously, who invented this spoon?
 Continue to cook the sausage mixture until the sausage is cooked through and the potatoes begin to feel soft. In a separate bowl, lightly beat 6 eggs. Pour eggs over sausage mixture and put a lid on the pot. Come back in about 3 minutes and stir. Repeat until eggs are set. Do not stir constantly, because the eggs will get mushy. After the eggs are set, stir in the salsa and cheese. Fill each tortilla with about a 1/3 cup of mixture, wrap in plastic wrap and freeze for later- or eat and enjoy!
 To re-heat, simply pop it in the microwave, and try not to burn your mouth on the lava burrito like I usually do.
