Potato Chowder

 As we have established, I like to get good deals on food. Especially healthy, filling food. I got all of these potatoes for less than $2. So, I made a giant pot of chowder.

It. was. awesome. You need to make this. Right now.

You will need:
10 medium potatoes, peeled and cut into one inch cubes
6 slices of bacon, diced
1 cup of corn
1 small jalepeno, seeded and minced
1 medium onion, diced
1 can chicken broth (or 2 tbs bullion)
Milk
1 tbs italian seasoning
1 tbs red pepper flake
Sour cream
Parmesan cheese

In a large soup/stock pot, saute onion, bacon and jalepeno on med-hi heat until bacon begins to turn brown and crispy and the onion is translucent.

Add in diced potatoes and stir to combine. Add in chicken broth or bullion at this point, followed by the milk. Pour only enough milk to reach the top of the potatoes, but not cover them. Add seasonings and stir. Cover and let simmer for 1 hour.

After an hour, uncover pot and, with a potato masher, lightly mash the potatoes to break them apart. Do not pulverize- remember, its a chowder :)

After the chowder reaches desired consistency, stir in corn. Simmer for 30 minutes. Serve with a dollop of sour cream and sprinkle with Parmesan cheese.
