Stuffed Acorn Squash

Looking for a way to get a man to eat some squash? Look no further.

After a miserable week in 100 degree heat with no electricity or water, I could not say no to J when he asked for stuffed squash for dinner. He claims it is his absolute favorite meal. I figured if he could tolerate my whining and body odor for a week I could probably make him a meal with a really healthy vegetable. I mean really.

Serves 2

You will need:
1 acorn squash 
1/2 lb ground pork sausage
1 cup hot salsa
1/4 cup shredded cheese
salt and pepper to taste

Split your squash in half and scoop out the seeds, like so


Put into a dish and set aside. Meanwhile, brown the sausage in a skillet. When cooked through, drain grease and mix in salsa. Scoop the sausage mixture into the hollowed out squash



Bake in a 400 degree oven for 30-40 minutes. In the last five minutes, top with cheese and return to the oven. This recipe is also good if you replace the squash with mushrooms and stuff those instead!
