Meatless whatever today is day

I'm a little frazzled lately. Yes, I know, meatless Monday sounds way better than meatless what ever the f today is day. Let's just roll with it, shall we?

Vegetarian Chili
3 cans of beans (I use black, pinto and red kidney)
1 onion, chopped
1 bell pepper, chopped
2 small cans of tomato sauce
1 tsp chilli powder
1/2 tsp cumin
1 tsp red pepper flakes
dash-o-salt
2 cans vegetable stock

Drain and rinse the beans, then put all of this in a crock pot, set on low, come back 6 hours later and serve with cheese and sour cream.

This is also good in a baked potato.

Want meat? I like ground turkey.

Don't have a crock pot? Put it all in a pot and simmer for about an hour.

Ta-da! Easiest. Dinner. Ever.
