how to preserve garlic

I had some extra garlic laying around that was starting to show its age. In order to avoid wasting it, a devised a little plan.

Peel the papers off your garlic.
Find a small jar (i found an old garlic jar, go figure)

Grate garlic with fine grater, put garlic in your jar, immerse in olive oil.

I use this to drizzle on bread, as a starter for a saute, or as a finishing oil on pizza. And I didn't even waste anything! Wahoo!
