Beet it!

One of my goals for this month was to cook with beets. I'll be honest. Beets are not my favorite vegetable. Or even really high on the list. Or on the list at all. But J liked this recipe, so if you like Beets, give it a try.
Beet. Blegh.

Wash and wrap the beets in tin-foil, drizzle with olive oil, roast in a 400 degree oven for 1 hour.
Save the oil, it add a pretty color to homemade dressing

Allow to cool slightly, and peel the skins off with your hands. Immediately wash your hands. Beets stain the crap out of anything they touch.

Slice thinly. Drizzle with balsamic vinegar and a squeeze of orange juice. Top with bleu or gorgonzola cheese, walnuts, and dried cranberries. You can serve this warm or cold.

Warning: Beets will turn your urine bright red. Don't freak out like we did.
