The joy of bread!

This is a recipe I use for sandwich bread. Its super hearty, so if you like the fluffy white empty calorie kind, its probably not for you. This bread also makes an excellent dinner roll.

You will need:
2.5 cups of whole wheat four
2 cups of bread flour
2 tsp yeast (we buy ours in bulk to reduce costs)
2 tbs turbinado, or sugar
1.5 cups whole milk
1/4 cup coconut oil

In a small sauce pan, heat milk, sugar, and oil until very warm to touch. Remove from heat and let sit for about 5 minutes.
In a large bowl, combine all of the wheat flour, 1 cup of the bread flour, yeast and salt. Pour in warm milk mixture and combine. Turn out onto a floured surface and knead for several minutes until you have a pretty dough ball. Put in a greased bowl, cover and let rise for about an hour until at least doubled in size. See the before and after?

Put dough onto your floured surface and pat into shape of a loaf pan, lightly. Put your dough into a greased loaf pan and bake at 375 for 30 or so minutes. Your nose will know when its done.

Let the loaf cool before you slice into it. No, seriously. Don't cut that bread yet. It needs to retain its moisture so it can be the envy of all the other bread. :)  enjoy.
