Chicken Salad

In an effort to eat healthier food, I have been trying some new recipes that are a little outside of my comfort zone. Enter: amazing chicken salad. Ho-leeeee-crap. So very good, especially on crackers.

You will need:
1/4 cup mayo
1 TBS brown mustard
2 TBS vinegar
1/2 tsp curry powder
1/4 cup cranberries (dried)
1 celery rib, chopped thin
3 cups of chopped chicken

walmart makes generic triscuits, if you're looking to save some dough.
Mix everything together, let sit for a few hours. Serve over crackers or on top of a spinach salad. Yum :) And I don't even like mayo....but this was great. You can't even tell your eating disgusting mayo goo. I loved it.
